SMOKEY PARTY JOLLOF RICE

INGREDIENTS FOR SMOKEY PARTY JOLLOF RICE
- Long grain rice, washed – 2 cups
- Onion whole – 1 medium size
- Onion, chopped – 1 medium size
- Garlic – 2 cloves
- Scotch bonnet pepper – 4
- Tomato – 10 big size
- Shombo – 8
- Tatashe – 7
- 2-inch ginger – 1
- Tomato paste – ½ cup
- Thyme – 1 tsp
- Curry powder – 2 tbsp
- Salt – 1 tsp
- Knorr classic/beef seasoning cubes – 2 cubes
- Bay leaves – 4
- Water – 4 cups
- Vegetable oil – ½ cup
- Fennel seed – 1 tbsp
COOKING STEPS FOR SMOKEY PARTY JOLLOF RICE
- Blend the scotch bonnet, tomato, onion, tatashe, shombo, garlic and
- Place a pot on fire and add in
- Once it’s hot, add the fennel seed, bay leaf and chopped onions until
- Add the tomato paste. Stir for about 5 – 8 minutes
- Add in the blended tomatoes. Stir for about 3
- Cover the pot and allow to simmer for about 10 minutes
- Add the rice, curry, Thyme, salt, Knorr classic/beef seasoning cubes and water
- Cover the pot. Allow to boil for about 15mins

- Assorted meat (Beef, Liver, Ponmo, Shaki) – 500 grams
- Salt – 1 tbsp
- Knorr classic/beef seasoning cubes – 1
- Onions, chopped – 1 small
- Water
- Onions – 1 medium size
- Tomatoes – 3 big size
- Tatashe – 2
- Shombo – 6
- Scotch bonnet – 2
- Garlic – 2 cloves
- 1 inch ginger
- Vegetable oil – 4 tbsp
- Onion, chopped – ½ small size
- Dry thyme – 1 tsp
- Curry powder – 1 tsp
COOKING METHOD FOR ASSORTED MEAT
- Season the assorted meat with salt, 1 Knorr beef/classic seasoning cubes, chopped onions, garlic, ginger
- Add enough water to cover
- Boil until tender (45 minutes – 1 hour)
- Roughly blend a pepper mixture of – tomatoes, tatashe, shombo, scotch bonnet pepper and set aside (check video if you put garlic and ginger too)
- In a pan, Add 2 tbsp of vegetable oil and heat up the chopped onion until translucent
- Add in the pepper mix.
- Season with ½ cube Knorr classic/beef seasoning cubes, dry thyme, curry powder
- Fry for 10-15 minutes
- Heat up a pan and add 2 tbsp vegetable oil
- Add the assorted mix and stir fry for 3-5 minutes
- Add in the pepper mixture
- Reduce heat, cover it, add 2 tbsp Leave for 5-10 minutes
- Serve
INGREDIENTS FOR AVOCADO SALAD
- Avocado, diced – 1
- Fresh tomato, diced – 2
- Red onion, chopped – ½ small
- Lettuce, chopped – ½ cup
- Red cabbage, chopped – ½ cup
- Lemon juice – 1 tbsp
- Olive oil – 1 tbsp
- Salt – 1 tsp
- Black pepper – 1 tsp
COOKING STEPS FOR AVOCADO SALAD
- Combine all vegetables in a bowl
- Add the lemon juice and olive oil
- Season with salt and black pepper
